Bread pudding with red dragon fruit or pitaya
Red bread pudding recipe with dragon fruit
Red dragon fruit- 1 medium sized.
Sugar -100gm
Water- ½ cup
Cream- ½ cup
Bread – 6 slices crusts removed and toasted
Remove the skin of the dragon fruit by cutting it into 2 pieces and pulling of the skin. Dice it and keep aside. Boil water in a pan and add the sugar. When the sugar has dissolved add in the dragon fruit cubes and cook it till the dragon fruit starts to disintegrate. Beat the cream well. Add in the cream to the fruit pulp and mix well. Remove from fire. Use any mould shaped like ramekins and cut the bread into circles to fit perfectly into the mould. Butter the mould and line the base with one bread slice and add 1 tablespoon of fruit pulp on to the bread. Make sure that the bread slice is soaked well with the fruit pulp. Alternate with bread and fruit pulp and fill the mould up to the brim. Refrigerate the pudding for 6 hours or more. Remove from the mould by turning it upside down.
Serve the pudding.
Serves four.
