CURRY LEAF CHUTNEY POWDER OR VEPELAKATTI
Curry leaves - 1 cup fresh
Chili powder - 1 teaspoon
Coriander powder- 2 teaspoon
Salt- half teaspoon or to taste
Lemon juice - 2 teaspoon
Oil – 1 teaspoon coconut oil
Pluck out curry leaves from the sprig , wash and dry it well.
In a wok or skillet add oil and heat it. Add in the curry leaves and stir fry till it is almost dry and crisp. Add in the chili powder coriander powder and salt. Fry till the raw smell is gone. Be careful not to burn it. Add in the lemon juice and keep on frying till it is dried out completely. Allow it to cool. Grind it in a coffee grinder. You can store it for months in a bottle. You can mix it with rice or idli, dosa and eat.
1 serving can be about 1 teaspoon.
