Sambaram
SAVOURY BUTTER MILK -sambaram
Buttermilk is the liquid remnant of what you get after making butter from yogurt. Sambaram is made by adding some spices to the butter milk after churning it. This drink has a very cooling effect on the body especially during summer. In Kerala sambaram or tender coconut (karikke, elaneer ) was the traditional drink before the advent of soft drinks and bottled drinks. This aids in digestion and can be taken after food also so that your stomach wouldn’t feel bloated. It gives you instant energy when you drink it.
Servings 2 people
Buttermilk 125 ml or half a glass
Water -475 ml or 3 times of buttermilk
Ginger - ¼ inch
Shallot- 1
Curry leaves- a sprig
Salt – a pinch
Using a blender to blend together butter milk, water salt ginger curry leaves and shallot. (Alternatively you can use a mortar and pestle and crush the spices and mix it with butter milk and water.)
Run the blender for a few seconds and strain it.
Serve it garnished with mint leaves.
You can also keep in fridge and serve it cold .
